What I Ate Wednesday GOES GREEN in honor of March and all the funny-looking leprechauns! And thanks to my Sunday food prep, there was a lot of green in my daily eats! 🙂
FIRST OF ALL, I think it should be noted that I did NOT reach for one or two or five of these delicious-looking treats. Yes, working at a middle school = hazardous to your health. THE FOOD JUST KEEPS COMING IN.
Breakfast (6:00AM) – Scrambled egg whites (I attempted an omelette and failed miserably YET AGAIN) w/feta cheese, red bell peppers, onions, and mushrooms
Snack (10:00AM) – PB and Jelly smothered on TWO Ricecakes
Lunch (12:30PM) – Leftover salad (Spinach, Arugula, Mushrooms, Bellpeppers, Cucumbers, Tomatoes, Ground Turkey, Salsa, and Bolthouse Caesar Yogurt Dressing)
More Snacks (2:00PM) – Blueberries, Handful of M&Ms, and a Tootsie Pop (could have done without the chocolate, but you don’t want to stand in the way of a girl and her chocolate. Especially during certain times of the month. This might be the second time I’ve shared too much information on this blog. SUBTLE DIVERSION – LOOK, THERE ARE TWO GREEN M&MS IN HONOR OF MARCH WIAW.)
Dinner (6:30PM): Tofu and Veggie Lettuce Wraps
I’m craving something sweet. So I may pop a VitaTop in the microwave in an hour or so. WE’LL SEE. Maybe this gum I’m chewing will start to taste like an ice cream sundae or something….
I also decided to forgo the gym today in favor of a walk around the neighborhood. I think that it was the perfect stress-relief! 🙂

Is Wednesday ACTUALLY your Hump Day? Or do you find that there are other days that are more difficult to get through? I have lots of hump days. Monday. Wednesday. Sometimes Tuesday.
Do you know the trick to making your lettuce cups look all professional like P.F. Changs? Mine look all floppy.

we’ve been making lettuce wraps a lot in the past three weeks or so and are having the hardest time finding a way to keep them together nicely. the only solution so far: double up the lettuce 🙂
