Weight Watchers Enchilada Casserole

In honor of National Margarita Day, I planned a Girl’s Night to celebrate the existence of margaritas. I figured it was important to balance out the tequila with some substance, so I threw together some Weight-Watchers friendly enchiladas.


I had to allot some extra points for the margaritas (obviously), so I wanted to make sure dinner wasn’t going to break the SmartPoints bank. Luckily, these 7-ingredient enchiladas are only 6 Smart Points per serving!

Weight Watchers Enchilada Casserole INGREDIENTS: 

  • 1 pack of 93% Ground Turkey
  • 1 can of Rotel Diced Tomatoes and Green Chilies
  • 12 extra-thin corn tortillas
  • 1 can of Enchilada sauce
  • 1 can of corn
  • 1 cup of fresh (or frozen) bell peppers and 1 cup of onions
  • 1 cup of shredded cheese
  • seasonings (salt, pepper, taco seasoning) for meat and veggies
  • Optional: a margarita on the side to keep you company

Weight Watchers Enchilada Casserole DIRECTIONS: 

  1. Pre-heat oven to 375 degrees.
  2. In a large skillet, cook ground turkey over medium heat until brown. Stir in the can of diced tomatoes and chiles. Add your cup of bell peppers and onions. Add taco seasoning and salt/pepper. Set aside.
  3. Place four tortillas in the bottom of a greased 13×9 inch baking dish. Spoon a layer of enchilada sauce on top of the tortillas. Cover with one-third of the meat and veggie mixture. Top with 1/3 of the can of corn. Sprinkle with 1/3 the pack of cheese. Repeat layers three times.
  4. Bake, uncovered, 30 minutes or until bubbly.

It’s one of the quickest things to throw together when you’re expecting company! I feel like I’m cheating by even calling this a recipe. Because I basically just dump things in a pan and then go sit on my couch and drink my margarita.
