Weekend Snapshots: 9/26/16

Another weekend has come and gone and I’m already counting down the days until the next one!

I thought I’d have a lot of down time this weekend, but in between Family Day and a trip to Knoxville, I kept myself pretty busy. Let’s do a picture recap and postpone Monday responsibilities until the end of this post!

Saturday:

A typical Saturday morning starts off with two cups of coffee and Brenda’s Step Aerobics class. It’s the perfect way to dive into the weekend. As usual, Brenda kept things so upbeat and had us all sweating buckets by the end of class.

After class, we quickly showered and got ready for Family Day at the medical school. Though I’ve already received a tour of the school, the anatomy lab, and lecture hall, I wasn’t going to turn down a free lunch so we drove up there for some delicious BBQ but even more delicious mac & cheese. After lunch, we came home and I baked some S’more Brownies to take over to Nicole’s for the evening. They came out looking like biscuits.

They were a little too marshmallow-y, but I think it’s because I chose the jumbo-sized marshmallows. Next time I’ll try making it with mini mallows sprinkled on top! It was a real easy dessert hack and it made me look a lot cooler than I actually am.

Dinner was pizza on a lavash bread (8 Smart Points for all you WW folks that are looking for low point dinner options!) I know it’s uncommon and maybe borderline weird, but I LOVE throwing corn onto my pizza. Anyone else?

Sunday:

Katy and I decided to try out a Barre class in Knoxville. We’d be crazy to drive the hour and a half just to go to a class, so we made sure to stop and do some other things while we were there. While waiting for our class to start, we went next door to a cute beer bar/bakery for a mid-afternoon snack.

The nitro cold brew was perfect and the “feta fetish” pizza I ordered was full of feta. (Say that 5 times fast). It was also topped with balsamic and kalamata olives. The best parts of a Greek salad on top of a pizza crust. Delicious.

The studio we went to was in the center of the Art District in Downtown Knoxville. It wasn’t easy to spot from the street, but once we walked through the door, we saw the cute ambience that everyone had spoke of online. There were cute lights lining the floors of the studio and there were doors on the opposite end that led out to a patio. The class was small and intimate; there were only 5 girls taking the class including the two of us.

I’ve never taken a Barre class before but I absolutely see what the fuss is all about. Who knew that small, repetitive movements could make your whole body hurt all over?

After class, we started to head toward Trader Joes but, naturally, got a little distracted by other things along the way.

We pulled up a seat on the patio and ordered Moscow Mules.

Sunday Fun Day is a thing. You just have to leave Claiborne County in order to participate.

We’ve already got plans to go back next weekend and try out another studio. And maybe another restaurant/bar?

The countdown begins…

  1. That was a pretty busy weekend, and you were planning to have some down time lol. It sounds like you had lot of fun though. Those S’more brownies look good. I would be ok with bigger marshmallows. And no, I have never tried corn on pizza but have used pineapple and jelopeno toppings before. Thanks for the recap. Have a great Monday 🙂

  2. Looks like you had a great weekend. I don’t think I’d drive 1.5 hours for a Barre class, but I love that you had a little adventure on your way there and back. As far as corn on Pizza, I’ll pass. Pineapple is as weird as I get on a pizza!

  4. Looks like a full weekend! The best weekends are the ones are when you aren’t expecting to do much as do loads. The exercise sounds interesting because I like running and weight training. Shall have to look out for a Barre class. Your cooking looks great and often when things don’t turn out as you wish, they are delicious. Lovely pics.

  5. I used to take a Booty Barre class and it was tough, but good! We used the little blue ball A LOT. I haven’t taken a step aerobics class in a long time, but would love to take it again.

  7. Wow! That sounds like such a fun weekend! My stomach is growling looking at all the food pictures. 😛 I need to go to a barre class. I take dance four days a week and we will do small repetitive movements for part of the class and it kills me. I need to do a full barre class one weekend. I wish I was in Knoxville to try that place out.

  8. I live about 40 minutes from my gym so I get it. I personally dont mind driving for a good workout class. Looks like a great weekend!

  9. Looks like you had a very memorable weekend. I have always wanted to try the Barre class. We do not have any close to me and driving three hours would be hard. Although, worth it I’m sure.
