Wandering Weekends: PaddleBoarding and Book Club

I love the weekend. More than I love a lot of things. I especially like the weekends that aren’t jam packed with events and to-dos.  They allow me to clear my head, be more rational, and put things into perspective in a more productive way than attempting to understand events or situations in the midst of all the craziness. This weekend was pretty fantastic, as most weekends are.

Wandering Weekend

Saturday:

Middle school fair + family time + massive amounts of food prep.

chia pudding

I am loving cinnamon lately. This is so unlike me. But I’ve been adding it in my chia pudding and it’s been so delish.

Sunday:

Paddle boarding in the AM + Book Club in the PM.

I love when my Sundays are filled with fun festivities. Makes the transition into Monday a lot easier! 🙂

Now it’s just work time + food prep for the week! On the menu this week is:

  • Cauliflower Pesto Rice (I’m obsessed with the fancy things my food processor can do).
  • Chicken Pad Thai (with cabbage instead of noodles, pinenuts instead of peanuts)
  • Ground Turkey w/Indian Masala (thanks to my amazing family who sends me packages of homemade masala).
  • Sweet Potato “Fries”
  • Roasted Squash and other Veggies! 🙂
  • Chia pudding. Lots of chia pudding.

Goals for the week:

  • Stay 100% on Detox Plan
  • Go to the gym or go for a run 5/7 days.
  • Catch up on The Voice. Duh.

Monday, I’m ready for you.

  1. In my eyes, low key weekends are the best! Sounds like you were still able to manage a bunch of fun into just a few days. Paddleboarding is something i’ve always wanted to try. It’ll have to wait until after our little twin girls make their appearance though. Great meal plan. Does your family live in India?

    1. It was my first time paddleboarding!! So relaxing and fun 🙂

Nope, my parents live in California. But, yes, we do have extended family in India still!

    1. Oh boy, my best friend kept calling it SUP and I thought she was a crazy. Maybe it’s just normal and I’m the crazy.
