Good morning!

I’m just popping in here real quick before I head off to the gym to do some cardio. I probably sound like a broken record at this point, but I feel so proud of myself for waking up each morning and getting in a solid workout before going to work.

I’m all about positive reinforcement so I’ll be over here patting myself on the back and demanding that Ankur do the same. If anyone wants to join in on the verbal praise or virtual pat-on-the-back, I’m all for it.

Let’s just hope I can keep this up during the summer months when things are hot and humid!

Anyway, moving right along. I thought I’d share a few things that have been going on this month. I always enjoy reading your responses to some of these questions in the comments section so feel free to chime in below and share what you’ve been up to lately!

Lately I’ve Been…

Cooking:

Homemade nachos has become a new favorite around here. I’d hardly call this “cooking.” It’s more like dumping. But, regardless, it’s dinner one night a week.

Drinking: 

Shakeology. I seriously didn’t know how much this stuff would fuel me and sustain me throughout the morning. I feel a noticeable difference when I don’t have my shake in the morning and I worry I may be addicted. Luckily, even though this tastes like dessert for breakfast, it’s packed with good-for-you nutrients and vitamins and keeps me energized all day long.

We are reading this as part of our Facebook accountability group. I’ve only read the first chapter because, somehow, when I crawl into bed at 8PM to read my book, my eyes start closing by 8:01PM. #GrandmaStatus

Celebrating

Unfortunately, we had to celebrate Mothers Day away from our mothers. BUT, we still celebrated from afar. I loved getting to Facetime the many mothers in our family this weekend. They’re all such special humans. <3

Feeling

HOT! The temperatures have been rising over the past week or so and it will be in the 80s every single day this week. It’s beautiful outside but our apartment seems to trap heat so I’ve been waking up in the middle of the night feeling sticky and sweaty.

Listening

I’ve been listening to a lot of Spotify while I’m at the gym. Top Hits, Happy Hits, Cardio, HIIT Playlist. They’ve got something for any day at the gym – whether I’m weight lifting or cardio-ing. But, pretty much, every single day, I listen to “Drop it Low” – no matter what I’m working out at the gym. Because that’s just my favorite gym song ever. And my favorite going out song. And my favorite getting ready song. It’s just my favorite. Y’know?

My Polar Heart Rate Monitor! I dug this out of the bottom of my drawer and started wearing it to the gym. Since I’ve been incorporating more weight training into my workouts, it’s been fun to see the actual impact that lifting weights has on my heart rate. I’ll probably write more about this later in the week. But, for now, I’ll just say that I love keeping an eye on my heart rate throughout my workout and I really enjoy seeing the calories burned – even when I’m not spending the entire hour doing cardio.

Watching

I don’t know why I never got into this show when it first came out. Because, right now, I’m OBSESSED. Kenneth is my favorite. Obviously. He’s an Appalachian hillbilly. Just like me.

Eating

Aside from the homemade nacho treat once a week, we’ve been eating a lot of veggies in the form of sheet pan dinners. I’m clearly a fan of anything that requires little to no effort. Dumping and roasting is the name of the game.

Feeling

I’ve been feeling GREAT. I think the consistency of going to the gym has made me feel so much better about my overall health. I still find myself stressing out about the number on the scale from time to time. But I try to remind myself that this is all about how I’m FEELING. And, right now, I’m just feeling great. Strong mentally and strong physically.

  2. I have to admire your discipline when it comes to diet and exercise. So many of us say we are too busy and our health tends to suffer as a result. ‘Busy’ ultimately is only an excuse and not a very good one when it comes to trading off your health. So good on you for keeping to your regime and no doubt your body will thank you for it in the long run.

  3. I use my sheet pan for all kinds of one meal dishes. Nachos is such a great fast meal or just for an appetizer when guest drop by.

  5. Nachos are a once a week meal at our house too! If we have leftover meat of any kind it almost always ends up in nachos! I love 30 Rock too and only just watched it for the first time last year, so you’re not alone! It’s such a great show though, I have no idea why I didn’t get into it when it was first out!

  9. You can’t go wrong with sheet pan dinners. I’m so glad to hear that you’ve been feeling so great! The Mother’s Day cartoon is so cute. Doesn’t every mom need that many people to help fill her shoes? And I love 30 rock, especially the early seasons. The plot at the end of season 1 with Floyd is my favorite.

    I’ve been eating a lot of roasted veggies, listening to the new Paramore album, reading As You Wish by Cary Elwes, and generally feeling pretty good because I LOVE this time of year. Spring makes me so happy.

  10. *pats you on the back* way to go! I’m so glad you’re feeling so great. That’s awesome! I’m curious about these Shakeology shakes – I have shakes for the program I’m in, but once I eventually reach my target weight, I’ll still need to eat healthy and I like the idea of a shake.

    1. Yes! The jalapeno is a household favorite, but all of them are really good! We’ve got roasted garlic in our fridge for our pizza this weekend 🙂

  13. I love sheet pan dinners, too. They’re usually filled with veggies, are so easy and have minimal cleanup, so they’re a total win! If you haven’t already, check out the blog Damn Delicious. She has a lot of sheet pan meals and the ones I’ve tried have been fantastic!
