Day 2 in Tulum was rough. It’s hard work to lie on the beach all day.
Day 2 is also the day that I cried. Because I ate the best meal I’ve ever had in my life.
I didn’t know vegan food could be so flavorful.
Mole with vegetables, topped with pepitas. Served with a side of homemade corn tortillas.
And then a purple sweet potato base topped with marinated vegetables.
I could 100% be a vegan if someone cooked me food like that for the rest of my life.
In the evening, we went to Unico for dinner.
Sangria and champagne were ordered.
Along with some fried goat cheese covered in honey. [At which point I reconsidered my bold statement of wanting to be a vegan.]
Day 2 dinner was my favorite. Not necessarily because of the food. It was just a combination of everything. The view of the ocean. The breeze coming through the open doors. The soft music playing in the background. The perfect, very connected and meaningful conversation.
The food was just an added bonus.
We like to watch Emily’s face every step of the way. Becky and Jen dubbed her a “super-enjoyer.” It’s really fun to come to Tulum with a super-enjoyer because she makes the enjoyment of all these experiences so much more enjoyable.

Tulum is stealing my heart. I can feel the magic build up inside of me after every single meal, every experience, every conversation.
