Ingredients (4 servings):
1 small onion, finely chopped
1 eight (8) oz. can tomato paste
1 green bell-pepper, finely chopped
3 cloves of garlic, minced
2 teaspoon chili powder
1 teaspoon garlic salt
Additional spices (optional, but I love my food spicy!)
Edamame (optional – but I liked the added protein)
Directions:
In a large saucepan (over medium heat), pour in the quinoa, onion, minced garlic, and green pepper. Cook for 10 minutes until the quinoa gets a little toasty brown.
Stir in the tomato sauce and water. Mix well.
Season with chili powder, garlic salt, and any other spices you want to throw in.
Bring to a boil and reduce heat slightly. Simmer until the quinoa is tender and the water has been absorbed (approx. 25 mins). Stir periodically.
