Greetings from Cancun! 🙂
I probably won’t be posting much from here since the Internet is kind of spotty, but this one was already drafted up, so thought I’d see if it publishes!
Friday:
I got an early start to Spring Break since I only had two conferences on Friday. I went for a 5-mile run on the LG trail and it was BEAUTIFUL
I’m just happy to be running outside again! 🙂
I stopped to grab some lunch before heading into work. It’s totally normal to bring your own avocado and cutting knife into Subway. Don’t judge me.
On Friday night, I went over to Veronica’s and we made spring rolls!
I had never made them before, but it was a ton of fun. Veronica and I agreed that we both made ours like burritos. It’s the Mexican in her. And it’s the “I wanna stuff as many veggies in my rice paper as I can” in me.
Saturday:
I woke up fairly early and went to Jen’s. Since both of us are in Mexico this upcoming week, we wanted to use up all of our ingredients from the Full Circle box, so we made a breakfast casserole.
I really need to start doing this weekly to have breakfast ready to go every morning. It was so good and filled with all sorts of veggie goodness.
We were originally going to go hiking, but it started to rain so we decided to go for a run instead. (Not logical thinking, but whatevs).
After our run, I went back home to start packing for Cancun before we met up with Randy and friends at DishDash in Sunnyvale.
I was so happy I got to see him, even if only for 2 hours. It makes me miss the days when we lived down the street from each other!
Sunday:
Flight to Cancun. With lots of turbulence. And three Xanax. But I am here, I am alive,
….and now I am off to enjoy Cancun! 🙂
