I LOVE pancakes. More than waffles, more than eggs, more than cereal, more than oatmeal. But I never really eat them for breakfast because (1) I don’t really like to “prepare” something that early in the morning and (2) I don’t really see any nutritional value in your normal, typical, IHop kind-of pancakes. But when I heard of people making Sweet Potato protein pancakes or mixing in some protein powder with their batter, I started thinking that I could create a concoction that would allow me to have the same great taste with some added benefits. It was simple, easy, and DELICIOUS:
Ingredients:
1/2 cup oatmeal
1/2 cup cottage cheese
1 tsp. vanilla extract
4 egg whites
handful of blueberries
Directions:
Mix all ingredients together (I just stirred with my hand, but if you want to use a blender that might be better).
PAM spray the pan and start cooking just like regular old pancakes.
Add your favorite topping! I added a mixture of 1 tbsp. melted peanut butter and a little Lite Maple Syrup. It hit the spot!
