Probably my favorite roasted vegetable, hands down. SO much flavor, crunch, and enjoyment in one bite.
Ingredients:
1 pound brussel sprouts (I like to get mine from local farmers markets, but Trader Joes sells individual bags!
PAM Spray/Touch of Olive Oil
Salt and Pepper to taste
Directions:
1) Pre-heat oven to 400 degrees.
2) Wash brussel sprouts thoroughly:
3) Cut off the ends and pull off any yellow outer leaves.
4) Place them in a bowl/plastic bag. Spray some olive oil and toss with salt and pepper
5) Place them evenly in a pan and roast for 25-30 minutes until they are crisp on the outside. Shake up the pan occasionally to make sure all sides are equally browned.
6) Take them out of the oven and sprinkle with a bit more salt.
