Is it just me or does the weekend go by 5x faster than the workweek? Anyone else feel that way? I can’t believe it’s almost September and we’ve officially been living in Tennessee for 2 months now. Crazy.
It’s also really nice that, in those two months, I’ve figured out a routine that really works for us. Living in this town is not as terrible as I expected it to be! In fact, I think I have more of a routine now than I did back in California. (This is likely due to the fact that there isn’t much going on, but I’ll take it!)
Saturday:
This weekend, Kasey, Nicole, and I explored Morristown. But, before heading out there, we took the Step Aerobics class (again) and got our butts kicked (again). It really never gets easier. I’m hoping that there will come a day when I can use my 5-pound weights for the entire time we’re on the step. Not just the first 15 minutes of the class.
Once we were showered and cleaned, we drove off to Morristown to do some shopping. We went to TJ Maxx and explored the mall for a bit. None of us came home with too many goodies, but I found a couple of things that were too good of a deal to pass up. Including rainbow sprinkles. Because the world is just a happier place when there’s rainbow sprinkles in your pantry.
I also purchased some 2-pound weights for the step class. So, while I’m working my way up to the 5-pounders, I’ll use these for the aerobics part and hope to God that I can use them for the entire 40 minutes we’re stepping!
I spent a few hours in the evening catching up with family and friends on the phone while walking around the neighborhood. And then I heard thunder so I ran back home and hid under a blanket. I’m scared of extreme weather. It’s the California in me.
Sunday:
I spent most of Sunday experimenting in the kitchen. Most of the time, my experiments don’t turn out that great. But, yesterday, I was on a roll.
I made sweet potato “chips.” I baked them at 425 degrees which made them nice and crispy. Once they came out of the oven, I quickly packed them in a Tupperware and threw them in the fridge before I ate them all in one sitting.
I also made some raspberry jam with some squishy raspberries that have been sitting in my fridge for a few days now. Just some chia seeds + squishy raspberries + water + maple syrup + a dash of salt. De-licious.
Eventually, I got my butt out of the apartment and went to the gym. (Since discovering the step class, I haven’t been back to the gym and I’ve been feeling guilty about wasting money on the monthly membership!). On my way back home, I made a teeny detour and picked up some froyo from the man with the dinosaur head. I felt like I was wife-of-the-year for surprising Ankur with froyo. He was a real happy camper.
Once I was home, I went back to my happy place (the kitchen. Duh.) and threw together a flatbread in 20 minutes! Dough + pesto + fresh mozzarella + heirloom tomatoes + walnuts + arugula dressed in balsamic and olive oil.
Not trying to toot my own horn. But it was pretty amazing.
Now, after food prepping all day yesterday, I’m ready to kick Monday’s butt. But first…coffee.

Nope never made my own jam before but definitely on my bucket list. The weather was really nice this weekend not too hot and not too cold. We actually stayed home most of the weekend except Sunday on Sunday we had our Sunday fun day. We got up cleaned the room and went out for a lovely Sunday evening with my two loves.
