Lately, I have been trying to be efficient when it comes to creating meals for the week, but as a result, I’m just roasting, stir-frying, and throwing things in a bowl (or a crockpot as of late). I miss experimenting in the kitchen; instead, I’m just pinning things onto my Recipes board hoping that I’ll get to it someday.
However, when I got home from Boot Camp last night, I realized that my Farmers Market loot from this weekend needed to be used before the veggies got soft and smushy. And I’ve been wanting to cook spaghetti squash for SO long. Perfect opp.
Low-Carb Chicken Chow Mein
Ingredients
- Spaghetti squash, cut lengthwise
- 2 chicken breasts, shredded
- 2 large bellpeppers, chopped
- 1 large onion, diced
- 1 large zucchini, chopped
- 2 cups broccoli florets
- 1 cup tofu, cubed
- Soy Sauce and Sriracha, to taste
Directions
- Pre-heat oven to 375 degrees and spray baking sheet with cooking spray.
- Place spaghetti squash downward on sheet. Roast at 375 degrees for ONE hour.
- In the meantime, stir-fry veggies, chicken, and tofu with a bit of soy sauce and Sriracha. Let it cool.
- Remove the squash from the oven and let it cool for 30 minutes. Once it’s cooled, peel away at the skin with a fork. The squash’s natural tendency is to be stringy and spaghetti-like.
- Mix your “spaghetti” with your stir-fry. Add some Soyaki/Teriyaki sauce if desired. Enjoy 🙂

This looks really good. Had not thought of using it in ‘Chinese’ food. I have used it in place of pasta with tomato based sauces and also in place of ramen noodles in soups.. but I also like it just cooked and shredded, and sprinkled with salt and parmesan cheese.

I am completely and utterly obsessed with spaghetti squash, I am its biggest fan! I go through about 12 to 15 pounds in about two days, how crazy am I? I just cannot stop! LOL! My favorite thing to do with it is actually spread it on a broiling pan and then place salmon fillets on top and then broil until salmon is cooked! The fat from the salmon infuses its flavor into the squash, SOOOOO good! Totally making that tonight!

Chicken would amazing with it! 🙂 Chicken, olives, tomatoes and spaghetti squash – with some olive oil and garlic 🙂 Do you like any other fish? Honestly, spaghetti squash is so versatile, the sky is the limit, LOL!
