And we are halfway through the week!
The weather has been kicking our butt this week. Extremely hot weather + state testing + end of the year = some crazy kiddos (and staff members!).
To beat the heat, I decided to go the smoothie route for breakfast this morning:
Let’s be honest. I haven’t always been a “green smoothie” person, but I’m experimenting. And this one actually turned out pretty tasty. I added in some kale I bought from Whole Foods (quick little plug to check out the Whole Foods $50 gift card giveaway from yesterday!).
I love how convenient it is (and Organic Girl isn’t as expensive as other brands!). I used kale + strawberries + blueberries + almond milk + chia seeds. I’ve been adding chia seeds to everything lately. I’m also trying to perfect a chia pudding. But so far, my two attempts have been really….liquid-y.
I know I’m only on Day 4, but I’m surprised that I haven’t felt any intense cravings for anything yet. I’ve been pretty satisfied and I think the fats (chia seeds, avocado, nuts) have been keeping me pretty full for a few hours.
The only slip-up I had was the coffee:
I’m allowed to have around 3 cups a week (until I eventually eliminate it altogether), but my cups are supposed to be itty-bitty cups. I opted for a Venti. And added soy milk (which is a NO on this plan). I couldn’t help it. I was reaching an all-time low in the late afternoon and my assistant principal was going on a Starbucks run for the staff. I, obviously, wanted to partake.
Let’s just say that coffee never tasted so good…
Now I’m going to go whip up some turkey burgers, get a little work done, and be in bed by 10PM. Ready, set, GO.

Oh- i forgot! Extra chia seeds AND real vanilla beans are a must. I get them at trader joe’s. slice them open, scoop out the beans in the middle. MMMMMMM
YUM. It always looks so good when you bring it in. I’m drinking my pudding. I failed. Hahaha.
i haven’t mastered chia pudding yet either but itz been fun trying and i just drink my sweetened milk lol

I’ve been staying inside (unfortunately) because it’s so hot. Didn’t realize it got over 100 degrees here! I just googled that so I could understand it in Celcius (37C in case you wanted to know lol).
Thankfully, we have A/C in our townhouse, I’m not sure what I’d do. I guess I could always jump in the pool hahah.
