For long time ETB readers, have you all noticed how most of my posts have progressed into bullet-point format? We’ve got Confessions on Wednesdays, Things I’m Loving on Thursdays, and Fun Facts on Friday.
Basically, I love bullet points.
This weekend, I’m looking forward to Game Night with the girls and another Barre class in Knoxville. I love the weekends. But before I completely sign off until Monday, let’s do our usual Fun Facts bit below. Feel free to share a fun fact about you in the comments!
1) I went to my first conference in Tennessee yesterday.
It was in Morristown so, obviously, I jumped at the chance to go to Dunkin’ Donuts for another one of their iced coconut coffees that I’ve recently become obsessed with. The conference wasn’t very helpful. I was looking forward to learning about how to implement reading strategies in the classroom. But, aside from the keynote speaker, I felt like I didn’t walk away with anything tangible. It was nice to be able to connect with the other special education teachers from my school though!
2) After step class, the girls (and Jax!) came over for dinner.
These weekly dinners have kept me mentally sane. These ladies + Jax are such a support for me – whether I need someone to vent to, hug, eat dinner with, or drink wine with. They make me feel the happiest.
3) Every once in a while, a family member will share old pictures on our Whatsapp chat.
This is the most recent one that was shared. Yes, that’s me. Yes, I’m JUST THE CUTEST. (Also, I am still the proud owner of those big ol’ cheeks).
4) Trader Joes now has Sriracha tofu.
I always bought their teriyaki tofu to throw in my stir-fry but I think I’m going to love this even more. Anything with Sriracha is significantly better than anything without Sriracha.
5) My mom has upped her texting game.
I was impressed when she started using emojis in her text messages but she’s upgraded and is now sending us gifs all day long. She’s way cooler than me.

I don’t care for tofu at all. I wish my Mom would text, she’s a bit older and doesn’t have an interest in texting.

I love sending gifs!! They are the best! My husband and I will go back and forth sending gifs and I find myself literally laughing out loud.
Awwww! You were such a cute kid. What a sweet photo. 🙂 Your mom is too funny! lol. My mom is all about sending me cartoon memes too. They make me smile.

I do not eat tofu–I have tried it a couple of times and it just does not appeal to me. On Sunday I will be picking up my cousin and my Mom and driving up to a friends for dinner. It is always nice to soend the New Year with those closest to you.

I just love Tennessee and dogs. For the most part I like tofu too just don’t know if I can take it so spicy. Lol.

Hope you enjoyed your conference. I am a single mom so I don’t get to travel much and definitely don’t get to attend conferences.
Ohhh, I’ve got to try that tofu. I like to stir fry it or bake it. So nice when it’s already flavored for you.
As a mostly vegetarian household, tofu is a big part of our diet. Yes, I’ve tried that Trader Joe’s flavor.
Also, I loved the childhood photo and your mom’s texting made me laugh out loud!
The Siracha tofu sounds interesting! Next time I’m in Trader Joes I’m going to look for it.

I love tofu and that Sriracha flavored baked tofu from Trader Joe’s looks delicious. I have to get some and have it with some grilled pork chops. Thanks for letting me know about the new flavor.
