Day of Prep. Day of Fun.

Happy Saturday! 🙂

Today was quite the productive day. I’m pretty sure that’s a result of falling asleep at 8:15 last night. I’m a winner.

I drove to Salinas right after work yesterday and was greeted with an excellent dinner. Fell asleep shortly after and, when I woke up, was greeted with an equally excellent breakfast.

The baby helped make breakfast – don’t even worry about it. 

Bhabhi and I drove to Pacific Grove/Monterey area to run some errands. We stopped at Happy Girl Kitchen to pick up some almond milk, but they ran out. But our trip wasn’t a complete waste. They had Blue Bottle Coffee.

And that will be my last coffee for three weeks. Unless I have crazy withdrawals (in which case I will have a teeny bit). But I haven’t really had cravings this week on the days I haven’t had any. So…we shall see.

We made our way over to Trader Joes and Whole Foods to pick up some goodies for food prep. And then returned home to this little one.

Bhabhi and I quickly ate lunch and then got to work doing some major food prep. Saturday’s our new Sunday for prepping for the week. Makes for a nice, relaxing Sunday!

We roasted a TON of veggies.

We experimented and made some DELICIOUS cauliflower rice.

And some incredible ground turkey.

All while Bhaiya and Baby put together some new furniture.

Around 5PM, we took a break from the food prep and decided to take a walk around the neighborhood.

Now, we are doing some serious Parenthood watching. Bhabhi and Bhaiya just started watching this show and I’m definitely enjoying these old episodes. SUCH A GOOD SHOW.

    1. I wasn’t too successful with a cauliflower pizza crust, but this rice turned out to be pretty easy!

    1. Oh my goodness, LOVED it! It definitely doesn’t TASTE quite like rice. But the texture was similar!

  1. I need to make a ton of roasted veggies for the week- such a great way to have veggies for the week, especially because some days I’m too lazy to cut up veggies. I also love sliced sweet potatoes!
