Happy Thursday!
We are in the second half of the week and that is the best feeling ever. Especially when there’s a 3-day weekend waiting at the end of it.
Last night, Brittany and Jacque came over to make dinner. Brittany’s been doing this clean eating thing for the month of January, which inspired a BYOV night. Bring Your Own Vegetable.
Jackie made a Puttanesca sauce, which I was hesitant to try since a main ingredient in it was anchovies. So gross. But she promised that I wouldn’t be able to taste it and it did, in fact, taste DELICIOUS. We also roasted two heads of cauliflower, two sweet potatoes, and a bunch of fingerling potatoes. AKA we all have lunch packed today.
