Happy Monday! Hope you all had a beautiful weekend. I most certainly did. Yesterday was my birthday so we spent most of the weekend celebrating! My celebration mode has been on since I stopped working a few weeks ago, so it’s just a continuation.
Today marks the first day of the summer semester for my EdS program. I spent all day yesterday looking at syllabi and creating calendar events for myself so I can stay on top of it – even when I’m back to work at the end of July.
I’m a little nervous, but mostly excited to be learning again. It feels fun to be studying alongside Ankur as he prepares for his board exam. I’m going to be tied to the books today, but wanted to pop on here with some pictures from the weekend (though if you follow me on Instagram, you may have already seen most of these on my Stories!)
Friday
Ankur and I spent most of the week unpacking and organizing our new home. We did a little more of that on Friday since our packages had arrived at the door. (Including this cute welcome mat!). We also took advantage of the 3-day free pass at a local gym here.
This gym is a-mazing. It has a cardio theatre. Which is exactly what it sounds like. A dark room. A movie theatre. But, instead of seats, they have cardio machines. And they post their movie selection online, so you can plan your week around it. UN-REAL.
Saturday
Katy and Kasey came over in the afternoon and we hung out by the pool! It feels really nice to already have friends here because making friends as an adult can be really stressful.
We got some Big Eds pizza (our new favorite pizza place in town!) and then went swimming for a few hours. Later in the evening, I managed to pull Ankur away from his books for a little bit to come in the pool.
Around 7:30, we went to a Mexican restaurant in the Northshore area (about 20 minutes away) and I got to drive through a part of Knoxville that I haven’t really seen before. There were so many lakes and coves and beautiful homes in that area.
When we got to the restaurant, I ordered a Frozé which just seems like a classier margarita. A margarita for 30 year olds. But it was delicious. And refreshing. The food was good, but I think I liked the drive there even better! On my way back home, I stopped and took a detour to watch the sunset.
These skies are just so beautiful. And there’s something so nice and calming about being near a body of water. I’ve lived near the ocean my whole life, but these past two years have made me realize I can totally be a lake girl too.
Sunday
Ankur spoiled me with breakfast and a homemade almond flour cake! Delicious. We both needed to read a little bit, so after breakfast, we ended up going to Starbucks for a few hours to get some work done.
There’s something that makes me oh-so giddy about being in close proximity to a Starbucks again. We studied for a bit, went home for lunch, a few more hours of studying and organization, and then got ready to go out to dinner.
We decided to go to Lakeside Tavern. I went a few weeks ago with Katy and loved the drinks and food and ambience and wanted to take Ankur there. It had been thunderstorming for most of the day so it was pretty cloudy, but again, you just can’t beat that feeling of being near water.
Once we finished dinner, I did a little detour again to show him the place I watched the sunset the night before. Not as many colors. But just as beautiful.
The rest of the evening was spent sitting on the couch, side-by-side, him doing his medical school stuff and me doing some reading of my own.
So fortunate to get another trip around the sun.
Have a beautiful day! 🙂
Questions of the Day:
- How was your weekend? What did you do? What did you eat?
- Have you ever tried a frozé? Do you prefer that over a margarita?

Happy Belated Birthday! Some sunsets are just beautiful – love that first one you saw. I know you’re excited to be back in school – I hope you love it! That’s great you have some friends where you live – making friends as an adult can be difficult. Omg, that cardio theater sounds amazing. I’d work out if I could watch a movie. LOL
